Ingredients:
VINAIGRETTE
- 6 tablespoons of balsamic vinegar
- 1/4 cup extra virgin olive oil
- 2 teaspoons of Dijon mustard
- 2 teaspoons of honey
- 1 Garlic clove
- Salt and pepper to taste
SALAD
- 1 kg Asparagus
- ½ pound of Grape tomatoes
- Shelled walnuts to taste
- 3/4 Feta cheese
- 2 tablespoons extra virgin olive oil

VINAIGRETTE

Directions
- Wash the asparagus. Eliminate the final part of the stem, which is the lightest and hardest. Whatever remains of the asparagus, chop it into pieces of about 5 cm.
- Cook the asparagus in a frying pan with a few tablespoons of olive oil, until soft.
- While waiting, wash the grape tomatoes and cut them in half.
- Chop the walnuts.
- Chop the garlic clove with a knife or use a garlic chopper.
- Prepare the vinaigrette: in a small frying pan, bring the liquid balsamic vinegar to a boil and let it reduce by half.
- In a bowl, pour the vinegar, add the minced garlic, the mustard, the honey, the olive oil, salt, and ground pepper.
- When the asparagus is done, put them in a bowl, add the walnuts and tomatoes, and crumble the feta cheese. (same some feta cheese to decorate at the end).
- Mix the vinaigrette ingredients vigorously to emulsify it and pour over the salad.
- Spread what is left of the feta cheese on the surface (it will appear white and not stained with vinaigrette) and serve.
