Salmon with Portobello Sauce

It’s time for a delicious Salmon with Vegetables Bathed in Portobello Sauce!

Ingredients:
  • 300 g Canadian Salmon
  • Pumpkin
  • Carrot
  • Roma tomato
  • Asparagus
  • Portobello
  • Onion
  • Garlic
  • Vegetables (those of your choice)
  • Red wine
  • Salt and pepper
  • Green oil
Time:
  • 40 min.
Portions:
  • 1 person.
Instructions:
  1. Season Canadian salmon with skin to taste. Cut the vegetables into sifflets and then whiten and season to taste.
  2. Sear the salmon for 4 minutes per side to prevent it from cooking all the way through.
  3. Preparation of the sauce. In a pan, fry the onion and garlic, once the onion is transparent add the portobello, after a few minutes deglaze with a little wine. When the alcohol has evaporated, add the vegetable stock and let stand for a few minutes over low heat. Before the vegetable stock evaporates, blend the mixture very well and strain. Season to taste.
  4. To mount the saucer. Arrange some of the vegetables on the plate using a ring to keep them in that shape, then carefully place the salmon on top of the vegetables and pour the portobello sauce over the vegetables and salmon. Finally, add the green oil as decoration.
