Baked tuna tomatoes

This simple but delicious recipe could start great conversations at dinner. As an appetizer it is light and fresh, also It will light up your entrée as a side complement.

You might have everything you need in your pantry. We are going to need fresh rounded tomatoes on the vine, some cheese and tons of your love. To bake it, a small oven will work perfectly.

Side note: If you are a beginner, this will make you look like a famous chef

Ingredients:
  • 2 tomatoes on the vine
  • 1 tuna can
  • Chopped green olives
  • 2 chopped boiled eggs
  • 4 slices of mozzarella cheese (brie or goat cheese also Works)
  • Monterrey cheese
  • Chopped parsley to fill
  • Parsley leaves for decoration
  • Salt and pepper to taste

Directions
  1. Preheat the oven to 360ºF (180ºC).
  2.  Wash the tomatoes well. Remove the top and bottom.
  3. Cut each tomato into four slices. Add a little salt and pepper.
  4.  In a bowl add the drained tuna, chopped boiled eggs, chopped green olives and chopped parsley. Great filling!
  5. Stir with a spoon. Check flavor and add salt and pepper if necessary.
  6. Put half of the tomato slices in a baking sheet.
  7.  Add the filling.
  8. Put a slice of mozzarella, brie or goat cheese.
  9. Another slice of tomato.
  10. Finish with the monterrey cheese.
  11. Bake for 12-15 minutes or until tomatoes are cooked and cheese is melted.
  12. Serve hot and add a little olive oil over each tomato if desired.
